Silverbeet & Cottage Cheese Quiche

Ingredients

  • savory short pastry
  • 1 bunch of silverbeet, cooked and chopped
  • 2 onions, finely chopped and sautéd in olive oil
  • 500g cottage cheese
  • 5 eggs, beaten
  • 1/3 tsp salt
  • pepper

Directions

Combine cooked silverbeet, sautéd onions cottage cheese and eggs in a mixing bowl. Add salt and pepper to taste. Blind bake pastry (technically what you’re supposed to do but I have yet to and my quiches still turn out well). Slow cook in oven at 150C for 30 mins or until done.
