Tzatziki

Ingredients

  • 750g plain Balkan style yoghurt
  • 1/2 English cucumber
  • 6 large/10 small cloves of garlic
  • salt
  • olive oil (NOT extra virgin)
  • pita bread

Directions

Drain water out of yoghurt in a cheese cloth for >1hr (2-3 hours is best). Peel and coarsely grate cucumber then squeeze water out. Finely mince garlic. Mix some garlic, some cucumber, salt and 1 tbls of olive oil into the yoghurt. Taste the mixture. Continue to add different ingredients until it no longer tastes like yoghurt and it to your liking. You should not be able to taste the garlic because the garlic taste will be three times stronger the next day. Serve with toasted pita bread.
