Ingredients
- 2x 400g tins of lentils
- 1 red onion, finely chopped
- 1 red pepper, roasted and finely chopped (I used the roasted peppers that come in a jar)
- 2tbsp finely chopped coriander
- 2 tomatoes, deseeded and finely chopped
- 1 avocado, cut into small cubes
- 200g feta cheese
Dressing
- 1 clove of garlic, crushed
- 90ml olive oil
- 30ml balsamic vinegar
- 1/2 tsp honey
- 1tsp dijon mustard
Directions
Put all the dressing ingredients into a jar. Shake well to mix.
Drain the lentils and rinse well. Arrange salad ingredients on a large plate in sections. Put the corriander in the middle on top.
Add the dressing just before serving and toss.
