Lentil and Avocado Salad

Ingredients

  • 2x 400g tins of lentils
  • 1 red onion, finely chopped
  • 1 red pepper, roasted and finely chopped (I used the roasted peppers that come in a jar)
  • 2tbsp finely chopped coriander
  • 2 tomatoes, deseeded and finely chopped
  • 1 avocado, cut into small cubes
  • 200g feta cheese

Dressing

  • 1 clove of garlic, crushed
  • 90ml olive oil
  • 30ml balsamic vinegar
  • 1/2 tsp honey
  • 1tsp dijon mustard

Directions

Put all the dressing ingredients into a jar. Shake well to mix.

Drain the lentils and rinse well. Arrange salad ingredients on a large plate in sections. Put the corriander in the middle on top.

Add the dressing just before serving and toss.
