Ingredients
- 3 large ripe bananas, mashed
- 3/4 cup sugar (raw or demerara, but granulated should work as well)
- 1 egg, slightly beaten
- 1/3 cup melted butter
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups flour
Directions
Combine the mashed, sugar and slightly beaten egg and mix well. Add the melted butter and mix well again. Add the sifted dry ingredients to the wet, a bit at a time, turning lightly until moistened. Spoon into 10 lined muffin tins and dust with raw cocoa. Bake at 375F/190C for 20mins or until browned. Makes 10 good sized muffins.
