Ingredients
- 1 1/2 cups all-purpose flour
- 2/3 cups granulated sugar (plain white sugar for us plebes)
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cloves
- 1/4 tsp salt
- 2 large eggs
- 1 cup (250mL) pumpkin puree (not pumpkin pie filling)
- 1/3 cup vegetable oil
- 2 tbsp green pumpkin seeds
- Coarse sugar (for topping)
Directions
Preheat oven to 350/180. Grease a 9×5 inch loaf pan. In a bowl combine flour, sugar, baking powder, baking soda, cinnamon, nutmeg, cloves and salt. Set aside. In a large bowl, with a wooden spoon or electric mixer, beat together eggs, pumpkin and oil. Gradually add flour mixture, beating until blended. Spread batter evenly in prepared pan. Sprinkle pumpkin seeds and coarse sugar over top (be liberal with your sprinkling).
Bake in preheated oven until tester inserted in center comes out clean, 55 to 60 min. Let cool for 15 minutes in pan on a wire rack, then remove from pan and let cool completely on rack.
