Cauliflower Cheese

Ingredients

  • 1 cauliflower, steamed
  • 50g butter, melted
  • 3/4 cup flour
  • 1/2 tsp curry powder
  • 1/2 litre soy milk (or regular milk)
  • parsley
  • salt
  • pepper
  • 1 1/2 cups grated cheddar/tasty cheese

Directions

Place steamed cauliflower in to a deep casserole dish. In a saucepan, melt butter, add flour a little at a time until it’s all absorbed. Sprinkle curry powder and slowly pour in milk (mix it in thoroughly and then add more, mix, add, mix, add and so on). Simmer sauce for a couple of minutes. Add parsley, salt and pepper to taste. Once sauce thickens, pour it over the cauliflower. Put a layer of cheese on top and bake uncovered in the oven at 350F for 30 mins or until the top is golden brown.
